Add Redis 6.2.7 as a dependency

What does this Merge Request do and why?

Adds Redis 6.2.7 to GDK as a secondary dependency. This is because we're moving to it in:

• Omnibus GitLab: omnibus-gitlab!6069 (merged).
• Our CI/CD pipelines (some version of 6.2.x): gitlab!89371 (merged).
