Stop automatic updates on all but some key dependencies
As discussed in: gitlab-org/gitlab-docs#1742 (closed), we want to pause automatic updates on all but a few key dependencies.
We can still manually update dependencies as required, but this way we remove the pressure to resolve upgrade issues every week while we replatform the docs site.
The list of dependencies to update is taken from: gitlab-org/gitlab-docs#1742 (comment 1691513755), and we can add and remove as we feel the need.
