ci: fix pipeline triggering for cng, omnibus and charts

With the new refactor for the release-cli triggering a release to cng, charts or omnibus stopped working.

This MR fixes the issue and also uses the GitLab API to trigger a pipeline on the project to release, being consistent with the rest of the client operations. Trigger tokens were separated from auth tokens as their function is different. This is also reflected in the documentation update.
