install node-exporter by default to match chart defaults

What does this MR do?

When installing Prometheus, node-exporter is not installed, even though the chart default is to have it enabled. I couldn't find anywhere that it's being disabled. So I went ahead and made the default here to enabled it. This seemed to work on a cluster that I control.
