Prepare the Operator docs for docs.gitlab.com

Prepare for #436 (closed) and gitlab-org/gitlab-docs!2307 (merged)

Most notably:

  • Rename filenames to use underscores instead of dashes
  • Use full URLs for the YAML files that are out of the doc/ path
