Revert "Merge branch 'add-custom-cert-escape-hatch' into 'main'"

What does this MR do and why?

This MR reverts !125 (merged) & releases a new version by bumping the version up

Reason: The change forces a StatefulSet update with each deploy which was not happening prior to the change. I believe this is because the certificate image is using a floating tag. I think Zoekt is one of the only (possibly only) services using a StatefulSet so perhaps why we haven't run into this issue with other deployed services.
