Docs: Charts Clean-up Effort: Indexes

As per https://gitlab.com/charts/gitlab/issues/1143, this is one part of many updates to the documentation for specific charts.

Included here: The indexes.

The indexes were missing the redis-ha and gitlab-runner charts, and I ordered them alphabetically, as well as tweaked the page text.
