Add known issues to README

Due to the problems we had in batching in https://gitlab.com/gitlab-org/analytics-section/product-analytics/analytics-stack/-/issues/151 and further described in #7, this adds a "Known issues" section to the README to caution against setting buffer_size to anything else than default.
