Move cube config to .env sample

Updates the README setup documentation to set up cube by using a sample environment file. This should remove the need to configure Cube on first setup without exposing secrets to the repository.

The example credentials in the sample file are dependent on "fix(docker compose): Set all services to run on... (!14 - merged)" being merged first.
