docs(platform): Add production load testing documentation

Load testing is conducted with k6 in the pre-staging cluster. The platform was running in distributed mode.

The load test includes:

  • Performance data for 5-2000 RPS
  • CPU/Memory usage for each scenario
  • Instance sizing recommendation
  • Initial SLO targets
