Update ruby from 3.0.0 to 3.0.2

Why is this change being made?

Updates ruby from 3.0.0 to 3.0.2 via registry.gitlab.com/gitlab-org/gitlab-build-images:www-gitlab-com-3.0 (see gitlab-org/gitlab-build-images!448 (merged)). This MR DOES NOT update the base OS from Debian 10 (buster) to Debian 11 (bullseye) even though the Docker's ruby official image between :3.0.0 and :3.0.2 (see gitlab-org/gitlab-build-images!448 (merged)).
