Update boilerplate with new language

Why is this change being made?

After much debate, it's been decided that we will no longer say that "100,000 organizations trust GitLab" and instead will say, "GitLab has an estimated 30 million+ users (both Paid and Free)..."

Other changes include updating the number of countries we have team members in from 68 to 65, and changing messaging to "GitLab is the open source DevOps platform..." @wspillane please merge when you are able. Thanks!
