Fix formatting and links in Interviewing page

Why is this change being made?

As part of my interview training, I had to read https://about.gitlab.com/handbook/hiring/interviewing and found broken links and formatting errors.

There was also an acronym that I had to look-up ("CES"), so I expanded its first use to make it easier for future readers.

This MR fixes the issues I found.
