Update usability improvements to UI polish gallery

Why is this change being made?

With the removal the total open SUS-impacting issues by severity, we are reevaluating what we showcase in the release post.

~bugs::ux is already covered in the Bugs section of the release post. Usability improvements are also a part of every release post item added. For these reasons, we are changing the specific Usability improvements link to UI improvements and linking to the UI polish gallery which includes the following set of MRs:

All Merge Requests that have the label UI polish Beautifying our UI and/or UX Paper Cuts and have before and after images in a table will show up here.
