Document AI Gateway maintainers and reviewers

Why is this change being made?

We're currently working on Document the process to be a maintainer / maint... (gitlab-org/modelops/applied-ml/code-suggestions/ai-assist#356 - closed) to improve the maintainability of the AI Gateway project. One of the improvements is to introduce the Dangerbot for AI Gateway (gitlab-org/modelops/applied-ml/code-suggestions/ai-assist!483 - merged) so that the reviewers/maintainers who are available for the MR author are shown in MRs.

This MR is to add the projects:ai_gateway tag to the personal .yml files, so that these people will appear in the reviewer roulette.
