doc: Rename Enablement handbook pages MVC

Why is this change being made?

Enablement has moved to Infrastructure and renamed to Core Platform. See https://docs.google.com/document/d/14oBM7PZr_6WaN6s46JZGnc7avxZ87RoXWl6B39fS7fA/edit for details.

This is a minimum change to move the team pages, updates all Handbook links and metadata. This is the minimum change that passes linting and automated testing.

It adds redirects from the old pages to bridge any transition period for externally stored links.
