Reformat the Tableau handbook page to use collaspeable sections

Why is this change being made?

This MR reformats the Tableau handbook page to provide collaspable sections to make it easier to navigate. Removes Marcus from the page and also removes videos of office hours which are outdated and will be hard to keep up with. Better to put the link to the recording in the agenda. No other content was removed.
