Update data/categories.yml

Why is this change being made?

The category Users has been renamed to User Profile. However, the category is still listed as Users in the category.yml. This keeps on causing breaking pipelines, as I tend to refer to User Profile, but Users would be needed. Hence I am suggesting this change.
