Update maturity target for dep firewall

Why is this change being made?

While reviewing the upcoming maturity levels, we noticed that the Dependency Firewall only had dates for Available and Lovable. That was a mistake. We should have dates for available and viable. This MR fixes that.

It also moves the date back for Available since the Pacakge team does not have the capacity to work on this in the coming months.
