Draft: update customer persona documentation to remove gender pronouns to be more inclusive

Please provide a brief explanation for this change:

Currently GitLab handbook outlines 4 separate buyer personas we may engage with including their experience, motivators, challenges, etc.

The names of the buyer personas are non gender specific (Alex, Dakota, Erin, etc).

The pronouns in each section are gendered (she/her, him/his). In order to be more inclusive and prevent unconscious bias, I recommend upgrading these pronouns to the non-specific 'they/theirs' which could apply to anyone regardless of gender.

it is common best practice in english to utilize they/them when the gender of a subject is unknown, and its safe to say the gender of theoretical individual personas are unknown.
