Initial draft of segment trends

Joshua Lambert requested to merge jl-segment-trends into master

Why is this change being made?

We lack a SSOT for documenting the unique trends and needs of specific market segments that GitLab serves. This knowledge today is typically within the field teams focused on these segments, as well as some R&D teams whom interact with these customers frequently.

This knowledge, if written down, could be better socialized within GitLab to help drive broader awareness and hopefully an input to more teams throughput the company.
