Tweak docs for go-jsonnet
I was about to MR the CI docker image to pin go-jsonnet, but honestly I'm not sure it's worth it. Instead, I've updated the docs to remove the outdated reference to the absence of (go-)jsonnetfmt, and to point out that we don't pin in CI, and to be vigilant of any problems that might cause.
