Update new Gitaly shard documentation with new k8s instructions

Part of delivery#1960 (closed)

In MR gitlab-com/gl-infra/k8s-workloads/gitlab-com!1494 (merged) we are removing the syncing of Gitaly nodes from chef entirely. This change updates the documentation for adding a new Gitaly shard to reflect this and provide more accurate documentation.
