chore(stgsub): Enable wiz-sensor
What
This MR enables the wiz-sensor on stgsub cluster to allow the runtime to start monitoring syscalls, as documented in https://internal.gitlab.com/handbook/security/product_security/infrastructure_security/processes/wiz-runtime-sensor/.
Why
This is one of the deliverables as mandated by our production readiness reviews, and as discussed in gitlab-com/gl-infra/readiness!248 (comment 2916717423), it'd be prudent to enable them on CustomerDot GKE environments.
