[mimir] - tweak mimir distributor and ingester resources

What

Increase mimir resources for distributor and ingesters.

Why

Memory during peak traffic periods is starting to get close to the limits, and we observed a single ingester OOM in the last 24 hours. We have also yet to onboard the remaining agents for our existing VM workloads.
