[thanos] Update thanos-query resources
What
Bump memory limit from 45 to 60Gi. https://gitlab.com/gitlab-com/gl-infra/reliability/-/issues/24581
Why
It's been OOMKilled constantly. After it's stable we can understand the memory footprint and review that value.
Best practice: request memory = limit memory. Reduce the change of been OOMKilled.
