Sentry: adjust resources and scaling, bump chart, monitoring fixes

  • As we don't have the Prometheus adapter installed in the ops cluster yet, we can't autoscale based on application metrics, so we'll just go with resource-based scaling for now.
  • Bump replicas of consumers up to 3, in anticipation of a large volume of frontend events.
  • Adjust resource allocations, in particular Kafka's because it's using a lot more memory than I expected (lol JVM)
  • Bump chart to pick up Nginx server config fix
