Upgrade redis-sidekiq gprd to patched Redis 6

What happened so far:

• We upgraded redis-sidekiq gstg to 6.0.10: https://gitlab.com/gitlab-com/gl-infra/infrastructure/-/issues/12342.
• We attempted to upgrade redis-sidekiq gprd to 6.0.10: https://gitlab.com/gitlab-com/gl-infra/infrastructure/-/issues/12343.
• That gprd upgrade had to be rolled back due to a performance regression.
• That performance regression was patched: https://gitlab.com/gitlab-com/gl-infra/infrastructure/-/issues/12896.
• We upgraded redis-sidekiq gstg to the patched 6.0.10: https://gitlab.com/gitlab-com/gl-infra/infrastructure/-/issues/12951.

We're gathering some data about its performance in gstg and intend to move to gprd soon.

That will support several other efforts, including &423 (closed) and https://gitlab.com/groups/gitlab-com/gl-infra/-/epics/443.
