update composer. prepare for symfony 6

What does this MR do?

Our backend packages are all updated to theri newest minor patch version. Roave is updated and all indirect dependencies. Additionally I have removed all smyfony deprecations I could find (acutally just one constant). This MR shall prepare the code for Symfony 6. Further steps are blocked by codeception 2.

How confident are you it won't break things if deployed?
