Minor backend dependency updates

What does this MR do?

Updates for

• codeception
• phpunit
• nelmio/api-doc-bundle

How confident are you it won't break things if deployed?

The packages are only for dev, doc, and testing. If the pipeline succeeds, they can't break anything.

How to test

1. Checkout branch locally
2. ./scripts/composer update
3. Run ./scripts/test to check phpunit and codeception
4. Have a look at http://localhost:18080/api/doc if the api docs are shown
