Setting a different grid cell pattern for analysis

I'm planning to use the code for my analysis on car dependence, where sprawl has an impact. I have checked previous research on the topic, regarding numerical assessment, and each sprawl insight share the issues you raise in your first paper. The methodology and the completeness of your SNDi remains really interesting and I'd like to introduce it into my analysis.
In my case study, I don't have a country as case study, but an Italian region (Lombardy, to be precise). In my analysis, together to other metrics, I am working at a grid cell level, then aggregating this values into municipalities. Nonetheless, at this point, I believe that working only at the cell level on the sprawl metrics would be enough for me.
Since I am far from being an expert user, I'd like to share my issues about the process I am preparing in case you could give me some advice or guidance, which I would really appreciate and thank you a lot
First of all: is there a way to do the analysis for a part of a country instead of the whole of it, as I understand it happens from GADM data? Secondly, and more important, my grid is constructed from aggregating GHSL 100mx100m cells (precisely, aggregating into 500x500m cells), saved into a polygon shapefile. Is there any way to construct the analysis from it?
