[fedora] Turn on CONFIG_HID_NINTENDO for controller support

Dave Olsthoorn requested to merge daveol/kernel-ark:configs/hid-nintendo into os-build

This enables support for nintendo switch controllers, both the joycons and nintendo switch pro controller. I also made sure the hid-nintendo module gets filtered to the modules package.
