Add basic node launch test for mapping nodes

Summary

As with the previous PRs, this PR add basic node launch tests to the mapping nodes. As with the localization node, the lanelet2_map_provider relies on the maps that are part of the autoware_auto_avp_demo which cannot be added as a test dependency as that would create cyclic dependencies that colcon cannot resolve.
