Change Bitwarden image to vaultwarden

#710 (closed) This updates the image to vaultwarden/server as bitwarden_rs is deprecated per this issue.

Also updated docs to reflect changes, arm support, and resolved issue with the if/else for DOMAIN value in the jinja template.
