Use symbolic link for Corstone-1000 FVP config (main)

The FVP config is not regenerated when the image is rebuilt. As the value of board.msd_mmc.p_mmc_file is set from IMAGE_NAME (which includes a timestamp), the FVP will continue using the old image even though a new image was generated. This could be due to optimization in Yocto the build system.

To ensure the FVP always uses the updated image, configure the FVP with the symbolic link instead (which doesn't change when the image is rebuilt).
