Fixes for KV260 (rootfs size & kernel logging)

Both k3s and greengrass need extra rootfs space. In KV260, CASSINI_ROOTFS_EXTRA_SPACE gets ignored. This change fixes this & adds grub options for logging to help in debugging future issues.
