Add UI section in CONTRIBUTING

Description

This MR initially started out as an aim to document our design principle but has now changed the scope of what it is trying to achieve.

Now, it introduces general information about contributing to our UI into the CONTRIBUTING document.

Important note

I've found this really hard to actually write down and I have put this up early as WIP as I am encouraging suggestions from other contributors.
