Upgrade Stratux To Latest

Description

Based on findings in #385 (closed), we have raised an MR upstream to fix the bug.

Stratux master is also currently incompatible with our current container setup.

Scope

• Upgrade Stratux container to latest
• If our changes are not merged upstream, then use our fork instead, and we will switch once it's merged
• Additionally, update docs to include heads-ups regarding glueing devices to USB ports, etc (as found in the ticket above)
