Implement larger demo model and reinstate skipped tests

As of !3 (merged), many tests are marked as skipped because there is no suitable model that would allow to perform the existing tests.

To do:

• Implement a demo model that uses the full feature set
• Adapt and un-skip the corresponding tests

This issue is to brainstorm what this advanced demo model should do...
