Rename endorsement in protocol part 2

Context

This MR rename the last occurrences of endors* in the protocol codebase that has not been tackle by !9425 (merged), !9424 (merged), !9364 (merged), !9362 (merged), !9355 (merged).

The only remaining occurrences of endors* should be the one needed in legacy operation encoding and in the storage that will be tackle in !9486 (merged)
