shift to 008 doc

Context

This MR switches the documentation from protocol Delphi to the newly adopted Edo protocol.

This involves:

• dropping the documentation pages of Delphi
• adding unversioned labels for each label within Edo doc pages (using the corresponding script)
• changing a few other other files, such as the Makefile, rpc_doc.ml, _redirects

Manually testing the MR

Reviewers and approvers can test this MR by checking that the rets in the new Edo pages are correct, and the Makefile and rpc_doc.ml have been modified appropriately.

Checklist
