Follow-up from "Upgrade OCIrepositories to source.toolkit.fluxcd.io/v1"

I think that we should try to upgrade the source controller version here, it should stay aligned with sylva-core versions:

      image: ghcr.io/fluxcd/source-controller:v1.6.2
```
That being said, I'll proposed a follow-up MR to generate these CRDs manifests from pkg/bootstrap/kustomizations/flux definition as we shouldn't be maintaining these versions in two places.
