Explore decoupling from `cattle-logging-system`
Summary
Same as for #1674, using the cattle-logging-system doesn't provide us with newer versions for certain pieces of software such as fluentd/fluentbit . Moving to logging-operator for this, would give us access to faster bug/security fixes and possibly more elasticity in configuring our logging stack .
As a short comparison, currently we use fluentd - v1.14.6 and fluentbit - 2.2.0 and logging-operator would provide us with fluentd 1.16 and fluentbit 3.1
