Allow setting custom rapidjson dir
Currently it's impossible to set custom path for rapidjson due to FORCE in https://gitlab.com/ssv/AnalysisSitus/-/blob/master/cmake/asitus_Rapidjson.cmake#L13.
Would be great if one could specify the directory.
