Eval documentation out-of-date after switch to using modules

Commit 78d69fb8 updated the eval interface (removing make-empty-environment, current-environment). Docs might need to be updated to reflect the updates.

Apologies if this is tracked elsewhere or if there's a process for catching these before release.
