Update to Mkdocs YAML File 

* Trying to address build problem for latest version of the docs page: TypeError: PythonConfig.__init__() got an unexpected keyword argument 'rendering'
* Potential fix being applied moves the "rendering" and "selection"
  sections inside a new "options" section for the plugins
