Jitsi app and server
I find the description of Jitsi somewhat confusing. I'd explain the client, server, web and their capabilities in one paragraph, and dedicate the next to the security recommendation
so the description would be:
A free and open-source app for secure video conferencing that can work with any compatible Jitsi server, which can also be used over the web in the browser. The project provides an open server for free use by anyone, but organisations and individuals who have the required technical expertise can host a Jitsi instance on a server they manage by themselves, but there are also paid hosted services for those who do not have the capacity to manage their own servers.
In the second paragraph, I'd concentrate only on the security:
It's important to use Jitsi only on trusted servers, because the server operator can in many cases access the conversations going through the servers they manage. Make sure you know the group hosting the Jitsi instance you use.
