Enable data-at-rest encryption for Ceph

While not critical for a homelab use case, it would be nice for Ceph data to be encrypted at rest. However, this would certainly necessitate a rock-solid backup/restore strategy being in place first, in order to avoid any data loss in the event of a re-deploy or catastrophic failure. There are also performance implications to consider.

Will consider doing this at a later time.
