Evaluate ulauncher v6

The macOS-style ulauncher application for GNOME included in Nix packages is version 5, which is marked as insecure based on its dependency on the vulnerable version 2.74.3 of libsoup.

Version 6 of the package, which uses the new version 3 of libsoup, is currently still in development.
