Update to latest version of elasticsearch

Description

In the foreseeable future we should update to the latest version of elastic search

Explanation

Our currently used version had its official End of Life date in march 2019. To not pile up on legacy issues we should move to a more recent version that is supported

Dependencies, issues to be resolved beforehand

While updating the dependency in this project is rather simple, the mapping generation is heavily changed (core-tools).
